Last week @realbreadireland held their gathering in Co Meath. The difference this time was it was time to visit the growers & millers. RBI was originally set up as a network of real bread bakers, it has since evolved to incorporate growers and millers & Baking schools 1/6
There are over a 100 bakers ranging medium sized bakeries to micro bakers from all around Ireland. In time the conversation went from baking to supply of flour & so the growers joined. The growers are experimenting with heritage & organic grains which will produce Irish flour 2/6
So now we are growing grains suitable for flour so next we need millers. So the millers join and the conversation evolves again. @TurloughKeenan is in the process of setting up a new mill to join Oak Forest Mills, @durrowmills & @BallymoreOrgan1 3/6
The growing will be about quality not quantity and provenance which is what the bakers are looking for. @realbreadireland set out to bring bakers together & it has grown into a group of like-minded, progressive & positive people who want to produce the best they can 4/6
It is a network where each person gives support, shares knowledge and encourages those starting out in an environment which will always be challenging. It was inspiring to see the full cycle of real bread happening in Ireland 5/6
So when you pick up that loaf from your local bakery don't think it's expensive, there's so much more to it. You are being fed the best of the best by people who care. Ask them to tell you about it next time you visit #supportlocal 6/6
