Advantages of the various heavies:
Y-TE
Pros: On LOS benefits to blocking defensive front, immediate combo threat with OT. Vert release threat. Moves another receiver off ball.
Cons: Blocking scheme limited to similar as OL, which can be challenges with size diff TE vs DL

Wing/Y-Off
Pros: Vert threat, release behind LOS for pass, can perform some lead block roles (split flow, kick block, fold insert), provides off ball benefit to reach/read blocks. Extends surface
Cons: Less down hill threat, limited combo, limited role away from alignment

Sniffer
Pros: Int. block angles, momentum for kick out, 2-way threat in block & behind LOS release, some interior combo capability. Hidden behind OL.
Cons: Limited vert threat, less downhill block ability than traditional depth, not great for combo, no run threat.

Half Back (offset or split)
Pros: Quick access to flat/wheel, momentum on kick/wrap/same side lead, run threat, hidden behind OL + cross flow (eyes of LBs)
Con: No immediate vert threat, some timing limitations on opposite side runs, difficult same side kick angle

I-Form FB
Pros: Best of worlds for block angles (besides wham) and momentum, run threat, 2-way flat threat.
Cons: Limited vert threat, difficult to leverage D inside

2nd RB/Scat/Slot H
Pros: True multi-RB backfield, multiple run threats, matchup issues in run/pass, outside/swing threat, ability to utilize motion in run
Cons: Limited blocker in backfield, loss of vertical threat

Important to note that all beside Y-TE force another receiver onto the LOS.
All but Y-TE and Wing reduce the surface to that side.
Between the tackles means reduced vert threat, better interior run angles
More depth has benefits of momentum, disadvantages immediate punch

Further off the ball, the less length you need.
Moving off the ball allows you to utilize shorter TEs with hands, more traditional LB builds. Further depth allows you to utilize their natural run ability. The more multiple their talents, the more you can be a match up issue

I'll finish with none of these are 100%. In-line TEs used to be utilized on end arounds, wings can insert opposite with counter timing, BB/sniffer have a run game role in SW. You can always break tendency.
