The Concept of Tandoori Cooking is indigenous to India.

Mud plastered ovens (both underground & above ground variety) were discovered in Kalibangan (in Rajasthan) that date back to Harappan Civilization (2500 BC)

In his Science and Civilization in India (3000BC-1500BC) A.K. Bag writes of small, mud plastered ovens found at Indus Valley Site of Kalibangan "very strongly resembling present day tandoor"

Even K.T. Acharya ascribes the origin of tandoor to Indus Valley Civilisation
As per archaeologist Vashnat Shinde, portable ovens have found at Harappan sites which are very similar to present day tandoors used in Punjab region

Not Only tandoor, but the concept of cooking common food items like chicken in tandoor also dates back to Indus Valley Civilization
But the present day version of Tandoori Chicken was developed only in 1940s by Moti Mahal Restaurant in Delhi by Kundan Lal Gujral and Kundan Lal Jaggi

Most of restaurant dishes like Butter Chicken, Dal Makhani, Shahi Paneer, Tikka are recent innovations
