Super Smash Bros. Ultimate, although *calling* itsself "ultimate," really isn't that ultimate YET. There are tons of genres still yet to be represented. In this thread, I'm going to list every genre that's still unrepresented, and give it one or more characters.
1 - First Person Shooters
FPS's are one of the BIGGEST video game genres out there, and it's shameful they haven't been represented yet. The first character I would choose to represent FPS's would be the Doomguy. DOOM is like the grandfather of all first person shooters.

DOOM has had a long history with Nintendo, and Bethesda already has representation in Smash with the Vault Boy Mii.
My next pick would be Gordon Freeman from Half-Life. Half-Life was a very influential franchise, revolutionizing the idea of story-driven shooters, and PC shooters in general.
You can't talk about FPS reps without talking about Mr. Shooter himself. Master Chief is probably the most famous shooter character. HALO is one of the most popular FPS franchises out there. Chief would also fit well as a core MS rep since he's Microsoft's poster child.
My final choice for a FPS rep is Heavy Weapons Guy from Team Fortress 2. TF2 is one of the most popular online shooters, with hundreds of thousands of people still playing today. TF2 introduced the idea of hero shooters, a genre where you would pick from classes in an FPS.
2 - Beat'em Up
Axel Stone from Streets of Rage would work as a beat'em up rep in Smash. SoR is an insanely popular beat'em up series, with a long awaited sequel releasing soon. SoR is owned by SEGA, meaning it wouldn't be too farfetched to say he's likely.

The Terrarian from Terraria is the most likely choice for a survival game rep. Terraria is one of the most sold games out there, and Terraria is known by pretty much every gamer out there.

4 - Battle Royale
Whether you love it or hate it, you can't deny that Fortnite is the biggest game in the world. Jonesy would be the most deserving character of getting in Smash in my opinion, because of how popular, influential, and profitable Fortnite is.

Rhythm Heaven is Nintendo's most popular rhythm game, so of course if they went for a rhythm rep it would be from one of their most popular series. The Chorus Kids or Tibby could both work, and they could use items from all the different minigames in Rhythm Heaven.

My first pick for a VN rep would be Phoenix Wright from Ace Attorney. AA is probably the most popular VN out there, and Phoenix Wright has a long history with Nintendo. He could work well as the next Capcom rep, too.

My second choice is Monokuma from Danganronpa. There's no denying how big Danganronpa has become over the past year, and now I can say it does deserve a rep in Smash.
Finally there's Monika from Doki Doki Literature Club. While a not very popular pick, she would be a very interesting and unique character. DDLC was one of the most popular VNs for a period of time.
7 - MMORPG
World of Warcraft is probably in the top 10 biggest games of all time. Every one has heard of it. Thrall from WoW could serve as a really good MMORPG rep in Smash

Bella Goth from The Sims could work as a very good life sim rep. The Sims is very popular, the Sims fans seem to think that Bella is the Sims character that should get in Smash apparently. She's also one of the original Sims characters.

My first pick for a Tower Defense rep is the Peashooter from Plants vs. Zombies. PvZ has evolved and become a very popular shooter on Xbox, but originally started as a tower defense game on PC and mobile. It was undeniably one of the largest TD games.

I would also pick the Dart Monkey from Bloons as a TD rep. Bloons TD 5 is the only Bloons game that has made it to Switch, but it's still one of the most popular TD games and hopefully will get more love on Switch.
10 - Sports
Waluigi. Yes, Waluigi. He would mainly represent the Mario Sports games since that's the only times he's made an appearance. I think we can all agree Waluigi should get in, right?

11 - Horror
Firstly, I'd choose Freddy Fazbear from Five Nights at Freddy's. Besides "dur fnaf cringe," there's not much stopping Freddy from getting in. FNAF is the most influential and popular indie game, so why not?

Next up is Pyramid Head from Silent Hill. I don't know much about Silent Hill, but I do know that it's one of the most popular horror games, and that it's known for how actually scary it can be.
Lastly for the horror reps, is Leon Kennedy. Resident Evil, while not having a huge history with Nintendo, has had most of it's games ported to Switch. RE is owned by Capcom, so again, Leon wouldn't be too far out there for Nintendo.
12 - Mobile
Red from Angry Birds. Angry Birds is THE MOST popular mobile game, and even made it's way onto PC and console, with 2 movies out and a third one on the way.

Chell from Portal is my number one choice as a puzzle rep. Portal is very popular, with a spinoff game even on Switch.

Astro Bot is the mascot of Playstation VR, one of the leading Virtual Reality systems. He's had one platforming game so far, and another one being released as a launch title for the PS5.

Isaac from The Binding of Isaac is the number one pick. He has loads of moveset potential, he's super popular, and would also represent the rogue-like genre.

Meatboy is my other option. Super Meatboy is one of the most popular indie games, and was known for being tough-as nails. Meatboy's moveset could be pretty unique, borrowing obstacles and enemies from his game.
