Ok I can't fall asleep so thought I would share my perspective (I can't put a hc label on this, it's really a pov) of science in Bleach as a fellow scientist... This time I will talk about Aizen and maybe next time I'll elaborate about other characters.
I cannot say that Sosuke is a scientist although he does in fact show some qualities worth of a man of science. He's someone who's just very enthusiastic: if he wants to know something, he will dig up all the possible information he can find about this particular thing.
I'm sure you know I'm talking about hogyouku here and also the oken (it's not only that, but I find these examples the most easy to discuss at 3am lmao). So, our boy Sosuke did his homework and found out all he needs to know about these things because he needs them for his plan.
Although he does know shit ton of information, it is still relatively not much because from what I remember, he never did exhibit any profound interest in any other objects or phenomena that does not relate to his plan to become the god.
On the other side, you have Kisuke: your stereotypical scientist. This guy wants to know everything just because it's knowledge and he wants to explore the unknown; he wants to create stuff that the world has never seen before. He has at least a tiny bit of information...
...of information about any topic you'll ask him about because he craves to know things and how they actually work. Sure, he does have his own topics of interest that he researches on more, but that's how all scientists work: they pick a topic or two and become pros in those...
...those particular fields. What makes Kisuke a scientist is his motivation and desire for knowledge in general because he wants to understand. Sosuke, on the other hand, studies science to use as a means to an end AND (the following words are the key to my argument)...
...AND if he didn't want to become the god, he probably wouldn't be concentrating on studying sciences even though he is incredibly smart. This is just something that doesn't make him get up in the morning, this is not in his character to discover the world.
