Why do people love demanding “accountability” so much

It implies that you need to answer to someone for something you’ve done

If you’re concerned about human moral obligation to one another the word you want is “responsibility” and it needs to be defined and goes both ways
“They have no accountability” just means you don’t like them and want someone to do something about the things you don’t like

It’s a hostile frame that requires nothing from you personally and makes demands on everyone around you
And it’s also an inherently childish stance that looks to an external power source to both define the issues and resolve your problems

Don’t demand accountability

Define the responsibilities you think people in a given position should have and fight for your perspective
If you’re upset that people with more money or power than you have more freedom than you do to act in ways they’d like to I think you’re confused about how the world works
