just to get everyone mad: I've made about 10 paellas at home, using a catalan recipe, but holy shit is it boring after the 3rd time. throw in octopus. use turmeric instead of pimenton dulce. use both. burn the socarrat early. burn it late. add chile peppers (this one is good)
I know the places to get "Official Catalan Paella™", why would I make that same shit at home, when I can invent and discover something new
