As many hospitality businesses prepare to reopen, here’s a few thoughts and insights from the perspective of someone who’s been working right through the pandemic.
Deliveries are an issue. Allow extra days, presume they’re going to be delayed and double check every order. Many places aren’t doing regular deliveries and they’re often out of stock.
Signage is the hardest thing you’ll do. Make them concise and as simple as possible, the more you have the less people read them. Big bright circles work better than words and if people aren’t doing what you want them to it’s YOUR fault so rethink and try again.
Customers are very anxious and you can expect the odd outburst, more so than usual. People have very different opinions on what should/shouldn’t be done and you’re going to take the brunt of it. Prepare your coworkers as best as possible, they’re going to need it 🙈
It’s going to be exhausting. Remember how mentally fatiguing your first day at work was? Well, it’s gonna be like that every day because you’re gonna be doing it in a way you’ve never done it before and probably iterating every day.
It’s easier to add than take something away, so play it simple. Keep menus tight, short, sales focused and with a light workload in mind. The simpler your offering the easier it will be to manage all the other problems.
You’re gonna mess it up, a lot. It’s difficult to change your business overnight and unreasonable to expect yourself to get it right first time. Take lots of feedback and act on the best of it.
Everyone is operating at a higher level of stress so expect bad decisions, irrational behavior, conflict, confusion and miscommunication. Especially from yourself.
If you’re operating at a lower rate of turnover, use the opportunity to debug your systems and procedures. Things won’t be as busy so you can recalibrate your recipes, margins, techniques and procedures. It’s surprising, and often embarrassing, what you’ll find.
Return to normal at your own pace, not because your contemporaries or the authorities are telling you to. Take your time and do it well. Consider that you may never return to your old incarnation and that could be for the best.
Take it easy on yourself and those around you. Sleep well, drink sparingly and try exercise where possible. Anxiety is exhausting enough, give yourself the best shot possible.
