@LukeTogniMU helped me out a lot with his collages of images from the movies and Galaxy's Edge.
The MC-80 was based on the same CG model for the Home One, which appeared on Galaxy's Edge and before that it was made for the 2011 Star Tours. There are a lot of differences between this model and the RotJ physical model. From proportions to details.
You will notice the engines are much smaller :

Besides the shots in the movie, they released a lot of images of the different variants in the special feature "A Final Alliance" where they also explain how they randomized parts of the ships to make different variants.
About the randomized parts (and this will bother the people who want some logic in their ship design). Those puzzle pieces appear on all sizes randomly through the different ships. For example, this is the same Communications Transmission Mast the Profundity has

There are other pieces that repeat themselves, but those are the more noticeable.
