Ofc she doesn't know him as well as Songhwa. They are friends for 20 years and Songhwa gets to see his casual self compared to Gyeoul who only sees his professional self bcs he kept her at arm's length
Ofc Songhwa had better judgement. It would be wrong if Gyeoul had better judgement than her. Also pls consider that we viewers had omniscient viewpoint. We SAW him getting teary-eyed after treating patient, we saw him happy after his patient got well.
Did Gyeoul know that side of him? Yes I bet she had some idea (based on her convo with Ikjun in eps 3) but is it enough for her to think he might be persuaded to stay by that reason only?? Very possibly not.
As you guys kept pointing out, he always wanted to be a priest. He wanted to serve God. Being a good doctor is also a way of serving God. But from Gyeoul's POV if he still wanted to be a priest after he spent years to be a doctor, he probably thought that -
being a priest is a greater act of serving. If saving more lives reason enough for him, he would've quit the dream of being a priest years ago. THIS IS GYEOUL'S POV

If you're Gyeoul, what reason u think (given u only know limited side of Jwon) that might be a greater chance as a mean to persuade him? Him POSSIBLY liking her. Bcs why? Bcs Catholic priest can't hv romantic relationship or marry!

You guys just reduced Gyeoul's character to ONLY as romantic partner for AJW. Ikjun basically laid out the reasons why she's a great doctor and how she was improving as a doctor but that went out the window the second she was a threat to ur ship.
