Iroh teaches from the basis of firebending, relying on breathing and philosophy to mold Zuko. Ozai teaches that fire is to be feared, focused only on desire.
In the beginning of the series, Zuko is a good firebender, but one that does not have an understanding of the meaning behind his bending; his bending fundamentals are not present.
Both Zuko and Azula do not understand the true meaning of firebending, but Azula has something Zuko does not: raw talent.
However, talent is never enough. Mastery requires hard work, pure motivation, and a connection between actions and mentality. Here we begin to see Zuko fully understand the nature of firebending.
After learning the meaning of Firebending from the dragons, notice how Zuko is advancing on Azula, blocking her strikes and getting closer. He has finally caught up to Azula, even though he doesn't have her talent.
Finally, we learn that fear is not an effective motivator for bending or for life. Out of breath, ungrounded, and confused: Azula, the most talented prodigal firebender, is surpassed by true understanding of the element of fire.
