

I've been vegetarian for 25 years and I've just recently become completely vegan, for ethical + environmental reasons. I hope to inspire somebody with this, to even have one plant-based day a week! Everything counts.

I don't have a pretty picture because I brought this with me at uni in a lunchbox yesterday, and it's not ~gourmet but I figured it's a whole meal so I'd add it:
Rice & lentils + Italian cavolo nero (it's a sort of black cabbage, or kale, with long leaves) with a peanut sauce

food cw/ Pumpkin pasta! Steam the pumpkin, then â as the pasta is cooking â mix in a pan with EVO oil, garlic and chili pepper flakes. Remove the garlic, add the pasta, and add toasted almonds, which you'll have finely ground. Mix and serve for a delicious pasta dish!

Vermicelli noodles of your choice (these are derived from mushrooms, pea starch and corn starch, but there's soy and rice ones too) and mushrooms, cooked in vegan cream, with herbs, onion and garlic. Pretty much divine.

vegan shortcrust pastry quiche with various vegetables. We had different types of cabbage with carrots 
and if possible I suggest adding onion
and some ground toasted nuts on top. Bake at 250°C until golden





Ground cashews, a mix of herbs (dried red onion, chives, garlic), some EVO oil and tamari sauce for a really good spread that makes for great appetizers

food cw// This is a classic, but worth mentioning. Start making the sauce with EVO oil, garlic, onion if you can, then add the tomato sauce. Leave on medium then low fire, while you cook the pasta in boiling water with salt according to the box instructions. Mix in the pan.Enjoy!
food cw/ Add cherry tomatoes to a pan with EVO oil and garlic, then toasted almonds (I hammered them inside a towel but you can put them in a food processor) then add pre-cooked bulgur (works with couscous or pasta as well) and stir until all flavours are mixed together.
food cw/ Lemon SEITAN! Even my omnivore friends love this, I promise. Put natural seitan in a pan with EVO oil, the juice of half a lemon, and create a lemon sauce directly in the pan with flour or starch/cornflour; add herbs of your choice and serve

food cw/ sorry for the ugly picture but I almost forgot! I decided to combine some leftover greens (courgettes/zucchini, flat green beans) with pan-steamed carrots and fresh tomatoes on top of this vegan quiche. Thereâs also a couple slices of vegan fake parmesan in it.
food cw/ Breakfast: oat flakes porridge (made with oat milk instead of water), with lots of fresh fruit 
and some maple syrup to sweeten.

this is one of my favourite ways to eat seitan, itâs delicious!!!

food cw/ Potatoes, bell peppers, courgettes (zucchini) + lentils and millet. This doesnât seem much to look at but IT WAS SO DELICIOUS!!!! Highly recommend. Iâm now full and happy.

food cw/ I didnât make this, but I wanted to say I went to a pizzeria and they didnât have any vegan options, so I had them make the veggie pizza with no cheese (adding tomato sauce). It was delicious! The veggies were amazing, luckily.
food cw/ Picture is really bad but my skeptical relatives LOVED this vegan savoury pie. Add onion and oil to a pan, then aubergines (make sure to salt well!), then zucchini, then sweet green peppers (small ones). When ready place in the pie and bake for 20 mins.

Soup: stir-fry onions and carrots (julienne cut), add salt, then add a finely chopped beef tomato and salt generously. Add green beans last.

Adding salt to the tomato will make its water come out and that will make the base for the soup! Iâve also added ginger powder, turmeric, cooking wine, and a dash of coconut milk.
