Hold up, didn’t Doffy say awakening affects the area around you? While he may have believed this was the case due to the rarity of awakened users, we have direct evidence to oppose this. A better definition of Awakening would be: An enhancement of your fruit.
(Note above that Doffy also said “can affect” instead of “will affect”.) Doffy can produce string, Katakuri can produce mochi. So as we would expect, the awakened version of their fruits allows them to produce more string and more mochi (thru the environment).
But what if your ability isn’t to produce something? Like the awakened Zoan Guards of Impel Down, their awakening enhanced the main effects of their Zoan devil fruits: physical strength and speed boosts.
Luffy’s fruit does one thing: turns his body to rubber. So what’s the awakening/enhancement to that? Make his body more rubbery! You might think this isn’t interesting or even lame but look what he’s done so far with just his rubber body!
So what exactly does this do? I’m going to get a bit scientific on you. It enhances the properties of rubber (and his control over them). Namely:
Compression
Elongation
Resilience (ability to bounce back)
Hardness

The best example of compression is Luffy’s Kong Gun. He compresses his fist into his arm to build up potential energy then releases a formidable punch. Awakening would allow him to use similar punches/kicks in base form.

Enhanced Elongation:
Luffy can already stretch really far but think about this crazy range boost! It might not seem incredibly useful but think about techniques like Snake Man: Python/King Cobra where his speed (therefore power) continuously increases the more it stretches

Enhanced Resilience:
This is what he uses to fly in Gear 4, he stretches his feet and then due to rubber’s resilience (elasticity) they bounce back. Think of a stretched rubber band snapping back to its original form, this rebounding force propels him in flight

Luffy can already send back bullets and cannon balls but what if he could take in the force of a punch and rebound that very same force back on his opponents

Rubber can have differing hardness. This more than anything would make Luffy’s awakening truly lethal. Luffy already has Armament so why does that matter? Although increasing the hardness of his fist would prove useful, the opposite is much more threatening.

What makes Katakuri so untouchable? The ability to foresee attacks and manipulate his body to avoid them. Rubber isn’t just a solid but has a liquid form as well. Granting free manipulation of his body, imagine Luffy dodging attacks like this
